Ingredients
  

  • Cake Batter
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 large egg
  • ¼ cup neutral oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • ¾ cup finely grated carrots
  • Crumb Topping
  • cup all-purpose flour
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 3 tbsp cold butter cubed

Method
 

  1. Mix crumb topping ingredients and chill.
  2. Whisk dry cake ingredients.
  3. Whisk wet ingredients and fold in carrots.
  4. Combine wet and dry gently.
  5. Pour into greased 6-inch pan.
  6. Sprinkle crumb topping on top.
  7. Air fry at 320°F for 22–25 minutes.
  8. Cool 10 minutes before slicing.

Notes

  • Use finely grated carrots only.
  • Don’t overmix the batter.
  • Tent with foil if topping browns too fast.
  • Let cake rest before cutting.
