Method
- Mix crumb topping ingredients and chill.
- Whisk dry cake ingredients.
- Whisk wet ingredients and fold in carrots.
- Combine wet and dry gently.
- Pour into greased 6-inch pan.
- Sprinkle crumb topping on top.
- Air fry at 320°F for 22–25 minutes.
- Cool 10 minutes before slicing.
Notes
- Use finely grated carrots only.
- Don’t overmix the batter.
- Tent with foil if topping browns too fast.
- Let cake rest before cutting.
