Ingredients
  

  • 12 oz pasta penne or rigatoni
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • ¾ cup heavy cream
  • ½ tsp salt plus more for pasta water
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • ½ cup grated parmesan
  • 2 tbsp butter
  • Fresh basil optional

Method
 

  1. Boil pasta in salted water until al dente. Reserve ½ cup pasta water.
  2. Sauté garlic in olive oil until fragrant.
  3. Add tomatoes, salt, and pepper. Simmer 10–15 minutes.
  4. Lower heat and stir in cream.
  5. Add pasta and toss, adding pasta water as needed.
  6. Finish with parmesan, butter, and basil.

Notes

  • Simmer tomatoes fully for best flavor.
  • Use pasta water to adjust sauce texture.
  • Don’t overcook pasta before adding to sauce.
  • Taste and adjust seasoning at the end.
