- Heat oil in a skillet over medium heat. Sauté onion and bell pepper for 4-5 minutes until soft.
- Add spinach/zucchini, cumin, garlic powder, salt, and pepper; cook 2 minutes until wilted.
- Place tortilla in skillet, add cheese and veggies to half, fold over. Cook 2-3 minutes per side until golden.
- Repeat with remaining tortillas. Cut and serve hot.
